Our story begins decades ago when Ceviche's owner and chef, Hunter Tiblier, lived with his family in Panama. As a "Zonian" (one raised in the U.S.-controlled Panama Canal Zone), Hunter's childhood included fishing with his father and tasting fresh ceviche at a surf shack.

These memories were the genesis of his restaurant and would take time and the assistance of a nurse named Laura to blossom. But we're getting ahead of ourselves.

After serving 26 years in the US Army, he mulled over what to do next while serving homemade ceviche to family and friends. When he met nurse Laura, he not only fell in love but also met a kindred spirit who would help shape his destiny as a restaurateur.

When Hunter took Laura to Panama to introduce her to his family, she fell in love with the cuisine and culture. Then she had a "Eurika moment." She recalled the wooden shack near her Wilmington yoga studio and realized it would be the perfect spot for a restaurant. With no prior experience, the couple poured sweat equity into the building to make the dream a reality.

In 2014, Ceviche's opened, and word of its fresh, delicious Panamanian cuisine spread like wildfire across the Cape Fear region. Over time, they expanded, got a liquor license, and added a rum bar.

News of Ceviche's fresh fare spread far and wide, and in 2018, the Food Network's Diners, Drive-ins, and Dives came knocking.

Vibe

While the restaurant isn't on the beach, the facade and vivid colors will transport you to Panama's shoreline. The festive mural, complete with a toucan, a blue sky, and Panamanian and US flags, sets the stage for a memorable meal.

Inside, the decor combines Panamanian touches with American elements. The rattan chairs, the vaulted wood ceiling, and Central American artwork will make you feel like you're in Panama. The white shiplap, ambient lighting, and patio lights add the American touch. It's the perfect spot to refresh and relax after a day at Wrightsville Beach.

Dining room seating ranges from family-style tables to stools along the bar, and the aforementioned patio tables out front.

All of these details work together to create a laid-back, homey atmosphere.

Ceviche's: Menu & Drinks

Early on, Hunter knew he needed help in the kitchen. Enter Wilmington Chef Sam Cahoon. In an interview with Wilmington Magazine, Cahoon explained the process. "He [Hunter] is a great home cook, and he knew the basics. I took those basics and just kind of ran with it."

Cahoon's creativity is evident in the salsas. If you're imagining the type you get at most Mexican restaurants, think again. These are inventive, bold, and rich in flavors. A standout is the Eloté Salsa with creamy mayo, cotija cheese, red pepper, roasted corn, cilantro, and smoked paprika.

Also noteworthy is the made-to-order guacamole. The Seasonal Guacamole is a standout with avocado, butternut squash, red onion, roasted red pepper, lime, cilantro, cayenne, and paprika.

You definitely need to try the ceviche, since it inspired Hunter. These come in a variety of flavors and seafood, with the Corvina being the Panamanian favorite. It features Pacific seabass prepared in the Panamanian ceviche tradition with lime juice, red onion, jalapeño, and cilantro. You'll also find shrimp, mahi mahi, scallops, and langoustine tails.

The menu also offers a variety of salads, tapas, empanadas, and plates. You're sure to find something for even the pickiest eater.

With "Rum Bar" emblazoned on the side of its building, this is the place to toast a trip to the Airlie Gardens or after attending a Sea Turtle Camp. Aside from rum-inspired drinks, the bar can concoct any cocktail, while the beer and wine selections will pair with any entree.
